Barista Badge, Step 3

I love a chocolatey coffee drink. My special weekend treat is to add a bit of hot cocoa to my morning coffee. Today, we’re stepping it up a notch. Inspired by our trip to The Brew Cafe for a cupping, we decided to learn how to make a mocha at home. Even better, a vegan one! This recipe is quick, easy, and fun to make due to the shaking-in-mason-jars step.
We’ll show you how to make a mocha at home as part of Step 3 of the Barista Badge. Interested in learning more about coffee? Check out our posts on the history of coffee and coffee terminology. If you’d like to earn the Barista Badge, check out the information in the gray box below.
Earn the Barista Badge
If you are interested in earning the Barista Badge yourself, you can see the Barista Badge Guide, or “recipe” for the badge here. Each Badge Guide contains three steps to be completed in order to earn the badge. These steps can be done on your own, but we encourage you to grab a few friends and learn together!
Step 3 of any badge is to take action and/or create something. We decided to create vegan mochas at home!
On a chilly Saturday morning, Katie and I got together with our mom to make vegan mochas. Teaching someone a new skill is always fun-and even better when it involves a yummy beverage. Prior to working on the Barista Badge we typically stuck to traditionally made coffee when at home. Armed with our new coffee knowledge we decided to go out on a limb and try our hand at something new! We are glad we did!
The vegan mochas were a big hit! They were just the right combination of coffee and chocolate! This would be a great activity to make with teens or any other specialty coffee fans. Attempting this mocha creation at home has definitely given us the inspiration to venture out and try other home coffee recipes! Lattes anyone?

Vegan Mocha Ingredients

- Instant espresso
- 1-2 Tbl cane sugar (or other white sugar)
- 1 Tbl cocoa powder (baking cocoa works well)
- 4-5 oz. Almond milk (or other milk alternative)
- Hot water
- Optional: coconut whipped cream, chocolate shavings
- Other supplies needed: microwave or teakettle, 2 mason/ball jars, measuring spoons
How to Make a Vegan Mocha
Step 1: Make your instant espresso in the bottom of your ball jar.
Follow the directions on your espresso mix. Ours called for 1 teaspoon dried espresso to 3 ounces of hot water. The water should be almost boiling, but not quite. Stir.
Step 2: Add 1-2 tablespoons sugar and 1 tablespoon cocoa powder to the jar.
Step 3: Steam your milk.
We used almond milk in a second jar. Pour in 4-5 ounces and top with the lid. Shake for a minute or so until the milk is frothy. Warm in the microwave 30 seconds at a time, stirring in between.
Step 4: Add milk to the espresso-sugar-cocoa jar. Top with lid and shake!
Use a kitchen towel to make sure you do not get burned on the hot glass or metal lid.
Step 5: Pour into a mug and top with coconut whip, cocoa powder, or chocolate shavings.
